I make these cookies about once every two weeks, I bake a few but make the rest into dough balls that I freeze and bake/eat as needed. They help give me a good milky boost and make for a great dessert for a new mama meal.
One cup coconut oil, soft or melted (use butter if you don’t need dairy free/don’t have EVCO)
1/4 cup white sugar
3/4 cup brown sugar
6 Tbs HOT water
3tbs Flax meal
1 Tbs Chia Seed
Two cups flour (whole wheat is best, can also substitute some ground oats for half the flour amount)
3Tbs Brewers Yeast
1Tsp Baking Soda
1 tsp vanilla (and I like to add 1tsp of maple extract too in the fall )
3 cups thick rolled oats
1 bar of dairy/soy free dark chocolate. I like Theo bars best!
Mix flax and chia with your hot water, set aside. Mix EVCO and sugar till creamed/combined, add in eggs one at a time. Add vanilla and flax/chia mixture, blend well. Mix flour, brewers yeast, baking soda well in another bowl and then slowly add wet and dry ingredients till just combined. Stir in oats and chopped up chocolate bar. Roll into balls and either bake or freeze, dough tastes/cooks best after being left to sit for a few hours. Bake at 375 for 12-15 minutes. Enjoy!
I notice a difference in my milk supply a few hours after eating three or so cookies. But I pretty much never only eat three… haha, they are so good! These cookies along with drinking lots of water, milk tea, and nursing frequently have helped me to significantly increase my supply many times.
